Hailing from Charleston, South Carolina, Chef Swanson spent his youth traversing the United States — from the East and West Coasts to Hawaii and Alaska. These travels allowed him to study regional food sourcing, understand the cultural significance of cuisine, and observe how geography shapes daily life.
Today, he channels this diverse knowledge through skills in hunting, fishing, gardening, and foraging — including over a decade of expertise gathering wild mushrooms, berries, and deep-sea spearfishing. His commitment to the land runs so deep that he even forages natural clay to create bespoke handmade plates for the dining experience.
Trained in Michelin-starred kitchens across the country, Kyle now brings that same standard to private homes, yachts, and intimate gatherings throughout South Florida and beyond. His menus blend New American, French, Latin, and Asian gastronomy with the finest local Florida ingredients.
